This is an approachable wine, with a lush palete that is framed by integrated tannins, and bright acidity. Slightly oak sweetness accompanies blackberry jam on the nose which continues onto the palete where it fills out the mouthfeel. The dark fruit comes through on the palete with black cherry and plum with a hint of baking spice to round out the experience.
Vinification
All lots were handpicked, and fruit was fermented 40% whole cluster while the rest was destemmed and manually berry-sorted. The fruit underwent a 7-day cold soak until fermentation began, naturally and spontaneously, and was basket-pressed after 4 weeks on the skins.
Élevage
The wine was raised in neutral barriques where native bacteria carried out malolactic fermentation. The wine was aged for 36 months before being bottled. This wine was crafted without the use of added enzymes, water, acids, tannins, or nutrients.

I received the coveted email from Alice telling me that I had been selected as a LabRat! WooHoo! But, for when? Timing was critical here since we leave for NorCal Wednesday morning! Launch was midnight Wednesday here and here I am doing the write up at 12:41 am—just after the launch! Oh, well.
On to the facts, dear friends: ddeuddeg picked up the box from UPS, and had the restraint not to open it! He let me open it when he got home. After all, it was in my name! And, I found a bottle of 2020 Thacher Paso Robles Cabernet Sauvignon and a Casemates glass. So, we began planning our menu and WHEN we could do the tasting! This was Curtain Up! weekend in Buffalo, the beginning of the new theater season, and we had two dinners and three shows planned! So, Saturday we popped the bottle while I was prepping our veggies. ddeuddeg is providing dinner details in his review. As always, we are happy to share recipes!
We decided to give it a quick taste right after pulling the cork. It was a beautiful ruby red and sure had the aromas of a Cab with dark fruit and cherries. Upon first taste, I found it to be rather tight but with great promise! It just needed a bit of opening time. It was a baby! I poured more wine into our glasses and went back to dinner prep and came back to it after about a half hour. Now, the wine was a lush, full-bodied wine with well-integrated tannins. The dark fruits; raspberries and deep red cherries came forth beautifully. There might have been a hint of tobacco, but very pleasing. Because we were off to the theater, we had to close up the bottle and come back to it another day! That is unheard of in our house! The other day was two days later! And, the wine held up beautifully! It didn’t lose a thing being opened and in the fridge for two days and only being “corked” with a Haley’s corker! I really like this wine a lot! I was sad to reach the bottom of the bottle.
This Cab has some definite aging potential. If you can swing it, go in for a case, try a bottle now, and then, open a bottle every few years! I just checked and the case price per bottle is crazy good! Find another buddy and split a case! Isn’t that what Casemates is all about?
A labrat bottle is always nice, but even nicer when Alice gives us a heads-up in time to pick it up before the pickup window at UPS closes for the weekend. As it happened, we had a nice flank steak just waiting for the right occasion, and what better occasion than a bottle of 2020 Thacher Cabernet Sauvignon for our Saturday night dinner. After some time with the marinade, it (the steak, not the wine) went onto the grill, while the herbed potatoes roasted in the oven, and bahwm worked her magic with garlic green beans and sautéed hakurei turnips (with the greens tossed in for good measure). Time to get the wine open while the meal is cooking, and before the delectable aromas ruin our palate. A subdued bouquet of dark fruits; plums, blackberries, black cherries greeted our noses. Then the first taste, smooth as silk, delicious dark fruit, not a hint of heat at 14.9% ABV. Maybe we’re just getting accustomed to these alcohol levels. Whatever, this wine was a superb accompaniment to our meal, but we had a show to get to, so we summoned the will power and set the rest of the wine aside in the fridge for later.
Later turned out to be Monday, with a “Pittsburg style” salad, with lots of fresh lettuce, some sliced red bell pepper, sugar snap peas, and the leftover flank steak. We let the wine warm up, and it was as beautiful as ever. With some additional time to get some air, maybe even better.
I don’t generally think of Paso Robles for Cabernet, but I guess I’ll have to expand my horizons a bit. This was a superb wine, perfect with the right meal, but I could see sitting out on the porch on a nice summer evening, sipping it totally on its own. This is a good deal for four bottles, but a steal at $16.67/bottle if you can spring for a case.

Trying to find any info about this specific wine on line is proving challenging for me. Anyone find anything? I’m seeing specific vineyards called out but not generic “Paso Robles”. My searching skills are letting me down.
Well Alice and crew put me on the spot asking to me to rat this 2020 Thacher Cabernet Sauvignon. So here we go, (I might add that the rattage from the previous offer is one tough act to follow) (and now I see two other pros ratting this wine, I’m doomed…ha!) packed with nerves. I generally followed the De Long template to ease me through the process.
Pulled the cork at 60° F. Poured a glass, poured off about 1/3 of the bottle into a .375 and into the fridge for day 2 and slow pour the balance of the bottle into a decanter. No sediment, just that a young cab is not going to balk at a little air.
Color medium to deep ruby, clear, initially low to moderate aroma, rather muted. It’s dry, medium bodied, touch of heat? nahh… balanced, fresh acid, low to medium round tannins, smooth medium finish. Flavorful, fruit forward (not jammy) black cherry. Touch of earth. Moderate legs for you leggy folk out there. Solid wine, kind of elegant, this isn’t going to hit you over the head like a Napa cab (broad paintbrush but you get the idea). No noticeable oak for you forestry enthusiasts. This is ready to go but certainly can lay down for awhile.
Tossed a Morgan Ranch strip, horseradish taters with garlic chives, beans yellow and green at it. Complemented the meal just dandy but it particularly enjoyed the starch.
My lovely bride was short and sweet with the comments. This is probably too fruity for you, full bodied, blackberry and cherry. Tannins soft and easy.
Day 2, I like this even better as does my bride. The nose has opened up, fruit has brightened up. A nice complete drink and figuring sub $20 a nice deal. And a grasshopper on the bottom of the cork to boot.
