Gruet Sauvage NV is a bone-dry sparkler, pale straw in color with a delicate but persistent mousse. The aromas of bright mineral and citrus notes tickle the nose followed by touches of green apple, lemon, and grapefruit. The finish is structured, flavorful, and long. The bright acidity makes this wine a perfect pairing for oysters, sushi, and cream sauces.

Anyone know how old a NV bottling is? I see reviews on CT for these NV bottles dating back to 2019. Are these 5 years old or does the producer continue to bottle NV wines haphazardly?
@losthighwayz I love posting opinions about sh*t I don’t have any clue…ha! My guess is their NV bottlings are continually produced. But with no lot numbers to track, who knows if you’re getting fresh goods or not. (WD may very well know what he’s getting however)
(I’ll add that most of those reviews noted above are not current, which probably means little when comes to bottlings like this)
@losthighwayz Most NV bottlings are created annually plus released however often they disgorge. Anyway, bubbly usually ages quite well for a few years minimum since they have plenty of acidity.
@kaolis and herein lies my frustration because 1. reviews are meaningless and 2. How do I know what I’m getting? I always wondered about this and what you’re saying makes sense!
@losthighwayz I would strongly prefer that. Many grower bubbly houses and some of the larger ones put lots of information on the back label, including cepage, vintage information, disgorgement date, etc. It’s just not uncommon to leave that stuff out.
I work for the winery and can confirm that we disgorge our NV items multiple times throughout the year and are typically shipping product within 12 months of production. As @klezman noted, these sparkling wines age very well, but we are never very long on inventory with the Sauvage wines. These like to disappear quickly!

Although I suppose I don’t know if that’s the case with Gruet or not. But I’ve always read even reviews from past years for NV wines the same as reviews for a specific vintage of a vintage wine.
