Horse & Plow Winery utilizes organic farming, small lot fermentations and traditional techniques to produce balanced, food friendly and site specific wines. Organic vineyards throughout the North Coast of California, including Sonoma, Napa & Mendocino Counties, produce wines with greater complexity and sense of place, while caring for worker health and the environment. The wines are made naturally with no synthetic nutrients or additives, no GMO’s, are vegan and contain low sulfites. Low intervention winemaking further conveys a sense of time and place in every handcrafted bottle.
The Wine
This Cab Sauvignon comes from two steep hillside blocks of Cox Vineyard in Mendocino. The grapes were picked by hand, gently destemmed, and cold soaked for 7 days. We fermented each lot in small open-top tanks, punch-down by hand, and aged in French Oak barrels for 2 years. This wine is not fined or filtered.

2022 Horse & Plow North Coast Cabernet Sauvignon - $45 = 20.00%
Appearance – a very lovely garnet color in the glass. It is almost, but not quite, translucent with light to medium legs.
Aroma – the wine has very subtle aromas. There are some hints of bright fruit, maybe raspberry, and a nice slightly herbal bouquet.
Initial taste – some nice acidity is noticed right away along with some fresh and tangy sensations. Some red fruits, again raspberry, maybe cherry and something that could be charcoal up front. Medium tannins noticeable on the roof of the mouth. There is nothing off putting about the wine, but this is not at all like a big, bold Napa Cabernet. In many ways the color and some of the taste is reminiscent of a Pinot Noir, but at the same time the classic Cabernet flavors are also there. It is good stuff.
With food – we had planned to have spicy chicken thighs, which turned out to be very spicy, and luckily for us the acidity really held up and the wine made itself noticeable through the heat. I think it would probably go well with almost anything.
In sum this is a very nice wine. It compliments food and is a pleasant drinker by itself. I can even imagine this wine slightly chilled on a hot summer evening. It was not what we expected when we pulled it out of the box and saw it was a Cabernet, but it proved that it didn’t have to be just like a classic California Cabernet to be good and enjoyable. Thanks Casemates for the LabRat opportunity, unfortunately, it doesn’t appear to be available to those of us in NH!
